Learn to make an elegant summer dinner

Are you looking for a gorgeous late-summer menu to wow some special friends or family members who will be visiting?

Noted local chef Chris Sprague (whose cooking and menu ideas have been featured in Food & Wine Magazine, The New York Times, Boston Sunday Globe, Yankee Magazine, and Colonial Homes) will demonstrate the preparation of such a menu when she teaches “Learn to Make an Elegant Late-Summer Dinner” at the FARMS Community Kitchen (upstairs over the Rising Tide Market in Damariscotta).

At the class, which will take place on Thursday, Aug. 20, from 6 to 8 p.m., Sprague will demonstrate ­­­the preparation of: chilled cantaloupe and champagne soup; sole baked in parchment with seasonal local vegetables; and lemon curd and blueberry parfaits.

All three dishes, Sprague said, can be prepared in advance so the cook can just sit back and enjoy his or her guests.

The cost of the class, $50 for an individual, or $85 for a couple, includes a generous sampling of all the dishes and complimentary wine.
