Let’s make cheese

Cheese lovers will explore the mysteries of milk in an upcoming cheese-making workshop at the FARMS Community Kitchen in Damariscotta (upstairs over the Rising Tide Community Market).

On Thursday, Dec. 3, 5:30 to 8 p.m., local cheese-making wizard Brittany Gill will take the mystery out of making fresh mozzarella, demonstrating how to culture, coagulate, cut and condense curd.

“You need no special equipment to make this delicious, stretchable cheese at home,” she says. “It can be created and eaten within the same hour! Fresh mozzarella is a great addition to holiday parties and can even be a fun adventure to make with the kids for Pizza Night.”

Chef Brittany will guide you through the cheese-making process in this hands-on class as you sit on a comfortable stool at the Community Kitchen’s central island. The cost of the class is $30, which includes a sampling of the cheese and a take-home recipe. (Sign up by November 24 for an early-bird discount of $5 per person.)
