Tomato pie

Our prayers go out to those who suffered from the wrath of Hurricane Dorian. Parts of the Bahamas have been devastated. Please, if you can, go to reputable websites to donate. I’m grateful our peninsula only had some heavy rain. The weather in Maine has been perfect in my book. I enjoy the drier, cooler temps.

The town has a different pace to it after Labor Day … it’s refreshing.

What are you going to do with all of your garden tomatoes? A Facebook friend of mine, Alyce N Andrew Davis, shared a tomato pie recipe with me that’s to die for. Alyce told me it originally came from Dennis Blackman. Hats off to Dennis; it’s a winner for sure. Thank you all for letting me write and share with everyone.

The grocery list includes one store-bought pie crust (if you want to make a homemade crust, knock yourself out, LOL). I’m all about convenience and, of course taste. The Hannaford brand is very tasty. You will also need three or four large fresh garden tomatoes. Please make sure you peel them. One bunch of scallions chopped, a handful of fresh basil, garlic pepper to taste, ¼ cup of finely grated Swiss, ¼ cup Parmesan, ¾ cup of mayonnaise. Mix together with one cup of sharp cheddar cheese.

I slice my tomatoes ¼-inch thick. Preheat your oven at 350 degrees and cook for 30-plus minutes. Mine had to cook a little bit longer because I made a deep dish. Make sure it has a nice golden brown top before removing. Please let it sit for a good 30 minutes. It will be very hot and it will have to firm up a bit. Next time I make this I’m going to add cooked bacon and serve it for a breakfast dish. As I always say, make it your own; you can add ham, fresh spinach ... all kinds of different things.
