Roasted garlic

I was going to write about this pea salad I make. The warmer weather is making me want to make salads and start warming up those grills. But the cold has hit again so I’m sharing this recipe with you that’s easy and good for all kinds of different things.

Roasted garlic bulbs are baked and healthy. I’m hoping it will help with all the sickness going around as garlic is a healthy source of warding off evil.

Grocery list: I buy garlic in bulk at Sam’s Club or Trader Joe’s. All you need its extra virgin olive oil, salt, pepper and tin foil. First, cut the tops off a bunch of bulbs, line them on tin foil, add a generous amount of EVO and salt (I used kosher salt this time though lots of times I use truffle salt – black or white) and pepper. That’s it. Now you slow roast it at 300 degrees for two to three hours. It turns out to be like a paste and is so good on a baguette or over steamed veggies. Toss it in a soup. I topped it off on a chicken dish.

I want everyone to know we are going through some very troubling times. I’m praying we all take a step back and help our neighbors. Our elderly with underlying conditions are the most vulnerable. Let’s make sure we keep a close eye on these people. I want to give a shout out to all teachers who are making it possible in keeping our children safe and keeping them learning from a distance. I also want to tell people to back off social media, go for a walk, clear your head, or read a book. We are all friends and hoping it stays that way. My hiatus from Facebook has been the best move for myself.
