Homemade nachos with a pineapple salsa

First, I want to congratulate The Patriots. Super Bowl win #6; not a very exciting game but a slow boring game win is better than a pretty loss.

What did everyone make for the game? I went to a couple of pre-game parties and tasted some incredible guacamole, short ribs, tenderloin and the best dips.

My husband and I watched the game at home. But, before I left to go to the pre-game bashes, I started building my own little pile of nachos and a pineapple and cucumber salsa.

Nachos are awesome. The best part is you can use chicken, beef, pork, shrimp, haddock or hamburger. Yes, you guessed it, out of all of those proteins listed, the ole ball and chain wanted hamburger. LOL. Love my hubby – he knows what he likes.

The recipe is pretty easy. Throw a couple of pounds of Pinkham’s house ground lean burger with an onion in a fry pan, sauté it up and cook through. I added a can of veggie beans I get at Trader Joe’s, and a can of Ro*Tel – we used mild. When done, set aside for later to build your nachos.

Now, the pineapple and cucumber salsa is so good and easy. Cut up your fresh pineapple into small chunks and same with the cucumber (it doesn’t really matter what kind of cuke you use), dice up into small pieces, add two heads of cilantro (I love cilantro), cut up and add half of a small onion. Take two limes and squeeze the juice into your bowl, add a pinch of salt and pepper, one tablespoon of rice vinegar and my secret ingredient is a lime and chili mix. I also get that at Trader Joe’s. It’s so fresh and light.

Boom! Now let’s build the nachos. First I spread out a small bag of your choice of chips on a cookie sheet. I then put a light covering of blended cheeses on top of the chips. I put the nachos in the preheated oven of 350 degrees. After the cheese is melted, about 10 minutes, take out of the oven and start to build. Add your meat mix. Most likely you will not use it all. Add your lettuce, the other half of your onion, cut up tomato, black olives, cilantro and the rest of your cheese blend. Bake for about 15 to 20 minutes; we like ours nice and crunchy. Remember, make it your own and have fun with it. This made enough for us to have them two nights in a row. I put them on parchment paper; they hold up very well. Night two, put on a cookie sheet and heat on 300 degrees for 15 minutes, and you’ve got yourself a second easy meal. They are that good. You won’t mind eating them again. Oh, don’t forget your dab of sour cream.
