Halibut with capers

Wow, I can’t help but love this beautiful weather we’ve been having. Get out in it, LOL.

I told you all I was going to find more tuna but it didn’t happen. I was going to Pinkham’s to get a fresh piece of tuna but they were sold out. All was not lost, however. I’m not sure about anyone else but halibut is my most favorite fish ever, so that’s what’s cooking in my kitchen this week.

First, I want to apologize to Trudy Mayhew. I saw her Saturday morning at Hannaford and told her I was going to cook tuna.

I only bought one piece for me; my wonderful hubby likes it but not enough.

First, I heat up a nonstick pan with one tablespoon of extra virgin olive oil. At medium heat, I place the halibut in the pan, skin down. I cook the bottom well so it’s nice and crispy. This is a pretty thick piece of fish so keep an eye on it. Toss some salt and pepper on it. Now, after three to four minutes, turn gently and cook for the same amount of time. Flip back over and add a heaping tablespoon of capers and a chunk of butter on top of the fish, turn on low heat and spoon the sauce onto the halibut. Cooking time is a total of about eight minutes.

I really can’t tell you how delicious this fish is and it is so easy to work with. It’s a must try and as you can see in my pictures, it pairs wonderfully with my watermelon, cuke and feta salad. It’s an easy, fast and filling yummy dinner.

Next week I’m on a stay home vacation, which is much needed. I hope everyone is getting excited for back to school shopping and soccer – whoohooo. I’ve got parents texting me already … love it.
