Cauliflower steak

I’m really excited to share this recipe with all of you. First I want to thank all the people who reached out to Richard and me with the passing of my wonderful mother-in-law Mary and my beautiful Nana Blake. They will be missed terribly. Richard and I are blessed with family and so many awesome friends. A little overwhelmed with all of the cards, phone calls and texts. We are grateful.

Grocery list for this recipe: cauliflower, your choice of nuts (I used pecans), honey, one tablespoon of butter and a tablespoon of extra virgin olive oil, feta and Havarti cheese (Havarti is a Danish cheese, creamy and delicious) salt and pepper and cilantro. It is a simple dish. I also served mine with tricolor quinoa. I told ya last week I’m jumping on the bandwagon towards healthy choices.

First, cut the core out of the middle of your cauliflower and set aside on parchment paper (saves on cleanup). Now take your butter and half of the EVO and put them in a medium size sauté pan on medium to low heat, add your pecans, and toss in a sprinkle of salt and pepper. Make sure you keep tossing the nuts because they cook up quickly. When they are roasted, add a tablespoon of honey on them and toss and let rest.

Back to your cauliflower. Add the rest of your EVO, salt and pepper, add your nuts, and sprinkle some feta around. Add three slices of your Havarti (I broke the Havarti up into small pieces). Bake on a cookie sheet at 350 degrees in a preheated oven for 45 minutes.

It’s that simple, so delicious and good for you. After you bring it out of the oven toss your cilantro on top or you could use fresh basil. Like I say, make it your own. Next time I make this I’m going to use sautéd spinach and some prosciutto.

I want to thank my dear cousin Amy for the inspiration and the Thistle Inn where she had ordered it for dinner one night a couple of weeks ago. Hats off to the Thistle Inn for a beautiful and delicious dish.
