Cooking class features chocolate mousse torte

On Wednesday, Feb. 26, Chef Peter Varns once again exhibited his skills to the Organ Society/Belles of the First Congregational Church of Wiscasset. He is shown with the finished result after demonstrating step by step how to make the black and white chocolate mousse torte. He also taught the group how to make homemade bagels and quick tomato soup. All present were served samples of the day’s menu and received copies of his recipes.

Varns, former pastry chef at the Damariscotta Grill, spent a year in France studying food history and the cuisine of France as well as taking courses in French pastry and desserts. He has worked seasonally at two four-star resorts in California and Cape Cod and has been a personal chef in Michigan, California and Maine. He lives in Woolwich.
